The sun-dried tomatoes are a wonderful addition to a basic spinach pie. I can't indulge to the extent I'd like due the medication I take getting mucked with by the spinach, but I can certainly have a few from time to time. My wife doesn't mind, since it just leaves more for her. One hint for dealing with the fickleness of phyllo sheets is to make sure a damp cloth is kept over them, or use a kitchen spray mister to keep them moist.
