Banana Bars
Ingredients
- 2 cups packed light brown sugar
- 1 cup butter Crisco
- 2 eggs
- 1 tsp vanilla
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3 cups Quaker quick or old fashioned Oats, uncooked
- 1 can sweetened condensed milk
- 2 ripe bananas, sliced
- 2 Tbsp butter Crisco
- 1 tsp sugar
Instructions
Heat oven to 350. Grease 13x9x2" pan. Combine sugar, shortening, eggs and vanilla. Beat till well blended. With a spoon, stir in flour, soda and salt. Stir in oats. Reserve one third of mixture. Press remaining into bottom of baking dish. In a medium saucepan combine condensed milk, bananas and shortening. Cook and stir constantly on low heat until mixture thickens and resembles banana pudding. Remove from heat. Stir in sugar, vanilla and salt. Spread over base. Crumble reserved oat mixture over top of filling. Bake for 25-30 min or until golden brown. Cool and refrigerate or serve warm. Cut into bars. Makes 2 dozen bars.
