Lemon Butter Snowbars
Ingredients
- 1 1/3 cup all purpose flour
- 1/4 cup sugar
- 1/2 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 2 tablespoons all purpose flour
- 1/4 teaspoon baking powder
- 3 tablespoons lemon juice
- 1 tablespoon confectioners sugar
Instructions
Heat the oven to 350. In a medium bowl, combine all the crust ingredients. With an electric mixer, beat at low speed, scraping the bowl often, until the mixture is crumbly, 2 to 3 minutes. Press on the bottom of an 8 inch square baking pan. Bake 15 to 20 minutes or until the edges are lightly browned. Meanwhile, in a medium mixer bowl, combine the filling ingredients. Beat at low speed, scraping the bowl often, until smooth. Pour the filling over the hot crust. Continue baking 18-20 minutes or until the filling is set. Sprinkle with the confectioners sugar. Cool, cut into bars, and serve or store.
