Pumpkin Bars with Cream Cheese Frosting
Ingredients
- 2 cups all purpose flour
- 2 tsps baking powder
- 1 tsp baking soda
- 2 tsps ground cinnamon
- 1/4 tsp salt
- 4 eggs
- 15 ounces can pumpkin
- 1 2/3 cup sugar
- 1 cup cooking oil
- 1 cup chopped pecans (optional)
- 2 3-oz pkgs cream cheese, softened
- 1 stick butter (1/2 cup), softened
- 2 tsps vanilla
- 3 cups powdered sugar
- 24 whole pecans for garnish (optional)
Instructions
In a medium bowl combine flour, baking powder, baking soda, salt and cinnamon. Set aside. In a large bowl beat together eggs, pumpkin, sugar and oil. Add dry ingredients. Beat well. Add chopped pecans (if desired). Spread in a 15 x 10 x 1 inch, greased baking pan. Bake in a 350 degree oven for 25-30 minutes (until golden brown or till toothpick inserted in the center comes out clean). Cool completely before frosting. Combine first three frosting ingredients. Gradually add powdered sugar till smooth (spreading consistency) You can use between 3 and 4 cups of powdered sugar. Spread on cooled cake. Cut into bars and garnish each with a whole pecan. Makes about 24 bars. Store in the refrigerator. These taste best cold!
