Black Bean Skillet
This easy black bean skillet is great as a dip for chips or a topping for rice. One pot recipes like this are great for large parties or big family dinners. This simple black bean dip would also be a great addition to your next taco night!
Ingredients
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 green bell pepper, chopped
- 1 carrot, chopped
- 2 cloves of garlic, minced or pressed
- 2 jalapenos, chopped (add seeds for extra heat)
- 1 can (about 15 ounces) black beans, drained and rinsed
- 1/2 teaspoon dried marjoram
- 2 teaspoons ground coriander
- 1/2 cup Cheddar cheese, shredded
Instructions
- Preheat oven to 350 degrees F.
- Combine oil, onion, pepper, carrot, garlic, and jalapeno in a skillet. Cook until carrots begin to soften, about 5 minutes.
- Add beans, marjarom, and coriander. Mix to combine.
- Place skillet in oven for 10 minutes. Remove from oven; top with cheese. Replace in oven for 5 minutes or until cheese is melted.
