Ingredients
- 1 pound ground beef
- 1 medium onion, cut into medium pieces
- 3 red tomatoes, cut into small pieces
- 4 whole eggs
- 1 teaspoon salt
- 1 teaspoon pepper
- 12 ounces plain bread crumbs
- 1 green pepper, diced
- 1/4 cup ketchup
Instructions

Preheat oven to 350 degrees F.

Place all ingredients except ketchup into a large bowl; mix all together well.

Place mixture into a loaf pan and bake for 50 minutes or until done.
- Remove from oven let stand 10-15 minutes. Spread ketchup over top of loaf and serve.

I agree with the other reviews that there are too many eggs in recipe, after mixing I had too double bread crumbs to make it the right consistency. I also had to cook it for 70 minutes to get it to fully cook to internal temperture of 155. After all that consistency of meat loaf was just like cracker barrels but flavor was not there, it was very bland and ketchup on top of meat loaf was not like sauce on top of crackle barrels meat loaf as it lacked sweetness.

I agree with other reviews about there being too many eggs. After following recipe I had to double bread crumbs to get it to the right consistency. I then also had to cook it for about 70 minutes to get it cooked to an internal temperture of 155 degrees. Meat loaf was bland and lacked flavor of Cracker Barrel meat loaf. Sauce (ketchup) on top also lacked sweetness of Cracker Barrel sauce.

I seriously think that four eggs is a typo? I can't imagine four eggs in a meatloaf recipe. Maybe one but not four!

I made this last night. It reminded me of everything I HATE about meatloaf. I like a flavorful firm meatloaf. This had very little flavor and the texture was somewhere between mealy and slimy. It was a disgusting mess. I'm thinking that 1 of the problems was too many eggs but that doesn't solve the no flavor problem.
