Tortillas bake, in just ten minutes, into cute crunchy cups that are filled with our saucy beef mixture and your favorite taco toppings. Kids, and grown ups too, will look forward to dinnertime on Taco Tuesdays when Beef Taco Cups are on the menu! So let's change up Taco Tuesday this week with these adorable Beef Taco Cups!"

    Ingredients

    • 8 (6-inch) flour tortillas. taco style
    • 1 pound extra lean ground beef
    • 1 cup chopped onion
    • 2 tablespoons taco seasoning
    • 1 (8-ounce) can tomato sauce
    • 1 cup shredded cheddar cheese
    • 2 cups chopped lettuce
    • 1 cup sour cream
    • 1 scallion, sliced
    • 1 tomato, chopped
    1. Heat oven to 350°F.

    2. Line 8 muffin cups with tortillas. Carefully overlap edges of tortillas to leave openings in centers for the filling. Bake 10 min.

    3. Meanwhile, heat a large non-stick skillet over medium-high heat. Cook ground beef, onion and taco seasoning until beef is browned, about 7 minutes.

    4. Stir in tomato sauce and bring to boil. Reduce heat and simmer 10 minutes, stirring occasionally.

    5. Spoon beef mixture, about 1/3 cup per bowl, into tortilla bowls. Top with lettuce, cheese, sour cream, tomato and scallion. Garnish with cilantro leaves.

    Do you think Rotel tomatoes would go good on these taco cups? I love the Rotel with the spices, but I am not much for fresh tomatoes. I love them cooked and in sauce or puree, but I am not a fan of them fresh at all. Maybe it's the texture of it.
