Coffee Beef Stew
I'll bet you never would have imagined a beef stew recipe with coffee in it, but this one is surprisingly good! The coffee adds a richness and balances the sweetness of the dates wonderfully. This is an unusual recipe you've just got to try!

Ingredients
- 2 1/2 pounds beef, cut into 1-inch cubes
- 1/2 teaspoon salt
- 1/2 teaspoon coarsely ground pepper
- 3 cups strong brewed Kona coffee
- 1 cup water
- 1 cup finely chopped onion
- 2/3 cup dry red wine
- 4 cloves garlic, minced
- 2 cups peeled and cubed potatoes
- 1/2 cup sliced mushrooms
- 1/2 cup whole dates, pitted and chopped
- 2 tablespoons capers
Instructions
- Sprinkle meat cubes with salt and pepper.
- Heat pan over medium-high heat.
- Brown beef; add coffee, water, onion, wine, and garlic. Bring to a boil and cover.
- Lower heat and simmer about 45 minutes.
- Add potatoes, mushrooms, dates and capers.
- Bring to a boil again.
- Cover, and reduce heat.
- Simmer 20-25 minutes. Serve over rice, with bread, or alone.
