Easy Clay Baker Meatloaf
This easy clay baker meatloaf really is as easy as it sounds. Use your handy dandy Roemertopf (fancy brand name for a clay pot with fitted lid) to bake it in the oven, and this awesome meatloaf recipe stays moist and wonderful.

Ingredients
- 2 pounds ground beef
- 1 egg, slightly beaten
- 1/4 cup minced onion
- 1 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/4 cup condensed vegetable soup
- 2 cups cereal flakes, crushed
Instructions
- Soak lid of Roemertopf.
- Mix ingredients thoroughly in the order listed.
- Shape into loaf and place in Roemertopf, cover.
- Put into cold oven, set temperature to 425 degreees F.
- Bake for 1½ hours.

Vegetable soup in a meatloaf? Now that has to be one of the most creative and genious things I have heard and seen. I am so hyped to try this idea out because you already put veggies in the meatloaf, and you use a tomato sauce or ketchup usually. So vegetable soup just adds some peas and carrots on top of the things you would normally find in meatloaf. With the spices, you have most of the ingredients you need.
