Potato frosted Meatloaf
Ingredients
- 1 lb. hamburger
- 1/2 cup milk
- 1/2 cup soft bread crumbs
- 1/2 cup chopped onion
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 Tbsp. catsup
- 1/2 teaspoon dry mustard
- 1 egg, slightly beaten
- 2 Tbsp. chopped green pepper
- 1/2 Tbsp. Worcestershire sauce
- 8 oz.s can tomato sauce
Instructions
Mix all ingredients together and shape into loaf. Bake at 350 degrees for 40 minutes. Remove from oven. Add 2 Tbsp. chopped green onion to 1 1/2 cups well-seasoned mashed potatoes and frost top of loaf. Bake at 350 degrees for 20 minutes more. Serves 4.

Meatloaf is comfort food and a family favorite. Instead of serving mashed potatoes as a side dish, with this recipe, they will be featured as a topping on the meatloaf. When preparing this, I would use lean ground beef, skim milk, low sodium Worcestershire sauce, and unsalted tomato sauce. Serve this main dish with green beans, and you have a complete meal.
