Pa's Smokey Meatloaf
If you love smokey food, you will love the smokey flavors of Pa's Smokey Meatloaf. Mixed with ground beef and Italian sausages, unlike most basic meatloaf recipes this one has liquid smoke for that savory hickory taste. Dig in.

Ingredients
- 1/4 cup dried onion
- 1/4 cup dried parsley
- 2 Italian sausages
- 2 pounds ground beef
- 2 jumbo eggs
- 1/4 cup sweet & sour sauce barbecue sauce
- 1 tablespoon soy sauce
- 1 teaspoon smoke seasoning powder, (mesquite) or liquid of your choice
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- 1/2 teaspoon rubbed sage
- 3/4 cup (plus more if needed) cornbread Stove Top stuffing mix
- salt if desired
Instructions
- Place the onion and parsley in small bowl and add a small amount of water to moisten; set aside.
- Remove sausage from casings, break into small pieces. Add beef and combine well. Combine the eggs, sweet & sour and soy sauce in a bowl, use a small whisk and blend well.
- Add the onion and parsley and combine well.
- Add the smoke powder, cumin, thyme and sage to the egg mixture, combine well. Add the stove top dressing to the meat and combine a while, pour the egg mixture over the meat mixture.
- Mix well and if needed, add more stove top or some potato flakes to the mixture to get a firm mixture.
- Place in what you usually use to bake your meatloves and get with it. I use a homemade draining insert in the slow cooker and let it cook about 4 hours on high, then on low for a couple more to get all the grease out of it.
