Prime Rib with Yorkshire Pudding
Ingredients
- 4 pounds prime rib of beef
- salt and pepper; to taste
- 1 cup all-purpose flour
- 1 cup milk
- dash salt
- 1 teaspoon canola oil
- 2 eggs
Instructions
Preheat the oven to 425 F. Season the meat with salt and pepper and place on a rack on a baking pan. Roast in the oven for 25 minutes, reduce the temperature to 325 F and continue roasting 50 minutes to one hour, or until the meat thermometer registers 150F. In a mixing bowl, combine the flour, milk, salt, oil and eggs, and beat until the batter is smooth. Let stand one hour. Preheat the oven to 425 F. Spoon two tablespoons of the fat off the roasting pan and brush it in a 9-inch baking pan. Pour in the batter and bake in the oven for 30 to 35 minutes or until puffed and set. Serve immediately with the roast beef. Yield: 6 servings

I've been looking for a nice way to prepare prime rib with yorkshire pudding. I've never made the yorkshire pudding before and was wondering if you need a special pan for baking it or if a muffin tin will do fine? I saw an episode of Pioneer Woman where she pours a little of the roast beef drippings into the bottom of the muffin tin. I thought maybe it would make it soggy but it looked delicious! Do you have any tips for making it?
