White Bread
Ingredients
- Finally made my first loaf of bread in the bread machine that I
- deem acceptable. Here's what I did.
- 1 egg in measuring cup
- milk and water to measure 1 cup with egg, + 2 tablespoons water
- about 1 1/2 tablespoons butter
- 2 1/2 cups bread flour (Pillsbury)
- 1 tablespoon rice flour
- 1 tablespoon whole wheat flour
- 1 tablespoon white cornmeal
- 2 or so tablespoons cream of wheat
- 1 scant tablespoon sugar
- 1 teaspoon salt
- 2 scant teaspoons yeast
Instructions
I started it on the regular cycle and let it go through the knead and first rise to the punchdown. Then I stopped the machine and restarted it, this time on the rapid cycle. Added a tablespoon of flour to the second kneading, because the dough was a little wet. Big improvement was it came out with a crispy crust, but it's the rice flour that does that (the rice flour also gives it a wonderful aroma - you don't need much). Much nicer texture, the egg and milk was part of it, the extra kneading and rising was the other part. Not bad, and closer to the results I get when I bake.
