Boston Market Copycat Cornbread
A country classic, corn bread is a great addition to your dinner. Boston Market Copycat Cornbread has a sweet and salty flavor that goes with just about any dish. With melted butter and a little bit of honey or maple syrup, you'll have yourself a cornbread recipe that is simply incredible. Made with butter cake mix to give it a sweet sensational flavor, its fluffy and moist center will have you eating slice after slice.
Ingredients
- 2 (8.5-ounces) box Jiffy Mix Corn Muffin Mix
- 1 (8-ounce) box of a butter recipe cake mix
- 5 eggs
- 2/3 cup milk
- 1 1/3 cup water
- 1/2 cup butter (softened)
Instructions

Preheat oven to 350 degrees F and mix all dry ingredients.

Add remaining ingredients and mix well. Pour into greased cupcake pans or mini loaf pans.

Bake 30 minutes or until golden brown on top and a toothpick inserted in the middle comes out clean.
- Allow to cool slightly in the pan (until pulls away from side a bit). Remove from pan and serve warm with honey or maple syrup.

Duncan Hines makes small boxes of cake mixes -- they make one 8- to 9-inch layer or 12 cupcakes. The 99-cent store usually carries them. I think that Mrs. Fields also has a one-layer cake mix. If you use one small Jiffy cake mix (yellow) and one small Jiffy Corn Muffin mix you get a version close to Marie Callendars' corn bread. Just mix them separately according to each package's directions, then fold together and bake in a 9" square pan at the time and temperature noted on the cake mix directions. West Coast folks may have trouble finding the Jiffy cake mixes (again, the 99-cent store sometimes has them), but you can order directly from the Jiffy folks on their website (but you hafta order a case, so go in with your baking pals on this one!).
