I've liked the commercially available breakfast cookies that I've gotten from Quaker and Belvita, and I'm really happy to find a recipe to make something very similar at home. This does look quite healthy and delicious and I want to make up a batch. Some walnut pieces would be a nice addition to the mix, too, and I think I might try that when I bake these.
