Breakfast Bell Pepper Rings
Breakfast Bell Pepper Rings are a quick and easy way to make your morning eggs a little more fun to make (and eat!) Think of this recipe as the veggie version of "eggs in a basket" or "eggs in the hole." This is a great way to get some veggies in first thing in the morning too! Simply cut thick rings of your favorite color bell peppers to prep, get out the frying pan, as many eggs as people you're feeding and the rest is super simple! This easy breakfast recipe is one we will come back to over and over, and we're sure you will too!

Ingredients
- 1 bell pepper, top and seeds removed, cut into 1/2-inch thick rings
- 4 eggs
- 1 large tomato, cut into slices
- 2 ounces shredded parmesan cheese
- salt and pepper
- 1 tablespoon olive oil
- 1 tablespoon butter

When I was growing up, the toast and egg version of this was called Toad in the Hole. I was surprised to learn that the British dish by the same name is actually something different. I love green pepper, so this would be a natural for me to make. I'd use some salsa on top rather than the hot sauce. I'm glad I came across this recipe since it gives me yet another option when I want some fried eggs.
