Breakfast Couscous
"Breakfast Couscous is a delightful and different spin on traditional oatmeal. It is rich in protein and fiber, filling you up and preparing you to power through your day. I love cooking. Homemade pasta…I’m your (wo)man. Complicated sauces…bring it! Roasting, braising, canning, and stewing…now you’re talking! But breakfast…eh. Yeah, just eh. See, mornings are not my friend. I never have been. Growing up, my sister was one of those chipper morning people. Man, that bugged me. Happy and chattering away, all I wanted was some quiet time to wake up. Slowly. Preferably with a nice big cup of steaming hot coffee."
