Easy Carrot Cake Muffin/Loaves
"The perfect way to start the day with these Easy Carrot Cake Muffins, if you want to fancy them up just frost them with a delicious Creamy Cheese Frosting. Muffins aren't very popular in Italy and I really don't know if they are still popular in North America, but I love them. Some people think they are difficult to make because if you stir too much they become rubbery, so just remember stir 15 or 16 times and you can't go wrong. Enjoy!"

I love how versatile this recipe is as it can be baked as a loaf or as muffins. I love carrot cake and this recipe looks easy enough to whip up at the last minute for a yummy breakfast, dessert or snack. Without the frosting they are even healthier and would be delicious for breakfast! I might bake these in a mini-muffin pan for a delicious lunch box treat!

Substitute unsweetened applesauce for the oil and use Splenda or just reduce the amount of brown sugar and I could definitely see this as a breakfast option (without the frosting). Muffins are very popular in our local bakery and in my house!

These look wonderful! Easy, and I'm sure, delicious! I like carrot cake, and muffins are easier to serve. Plus, now I can call it breakfast, because they are muffins, right?
