What a great idea! This is a fantastic way to have a healthy, hearty and delicious warm breakfast any day of the week! I would probably leave out the ham, so it wouldn't be a true western omelet, but I love the idea of individual omelets. These would also be great for a brunch or potluck and you could add any cheese, meat or veggie you have on hand!
