Easy Morning Breakfast Quesadillas are going to be your new, favorite, go-to breakfast idea for no-fuss mornings. This breakfast version of the Mexican classic appetizer makes a hearty meal that everyone will love. This recipe basically adds eggs, bacon, onions, and jalapenos to the mix making them stand out from your typical cheese quesadilla, and making them perfect for breakfast. If you aren't a fan of spicy foods, it's easy to leave out the jalapenos, however, if you're a huge fan of a little added spice, kick up the flavor even more by dousing them with a little hot sauce at the end. Regardless of your flavor preferences, these breakfast quesadillas are bound to hit the spot.

Ingredients
- 4 eggs
- 2 tablespoons heavy cream
- salt and pepper
- 1 tablespoon butter
- 4 fajita-sized flour tortillas
- 3 ounces Chihuahua cheese
- 3 ounces shredded Mexican cheese blend
- 4 slices of bacon, cooked and crumbled
- 1 jalapeno pepper, seeded and finely diced
- 1/4 onion, sautéed in a pan until caramelized

Instructions

In a bowl, whisk together eggs and cream. Season with salt and pepper. Scramble eggs in a small skillet until soft and just set. Set aside.

In a cast iron skillet, heat butter and place two tortillas down. Top each with half the eggs, cheeses, bacon, jalapeno and onions. Top with additional tortillas.

Cook for 1-2 minutes more, flip and cook until bottom is lightly golden brown.

Remove from pan and allow to cool 1-2 minutes. Cut into wedges and serve with sour cream and additional hot sauce if desired.

Quesadillas are so easy to make and I've probably had just about everything I can think of in one...but it has never dawned on me to try it with breakfast in mind. I'm not sure what Chihuahau cheese is...but with caramelized onion and peppers mixed into the eggs, this has to be amazing.

This is incredibly easy to make, and even though it's the middle of the afternoon, I want one of these right now. We have just about everything needed for this and I'd serve this with some fresh salsa as well as a bit of sour cream. Thanks for posting this along with the video which really shows how simple to make and delicious this is.
