Frozen Blueberry & Banana Smoothie Bowl
"Frozen Blueberry & Banana Smoothie Bowl - creamy, cool, easy and refreshing [Vegan, GF] I don’t often eat smoothie bowls. But when I do, it’s partly because I feel like something ice-cold and sweet, with minimal chewing requirements (often somewhat hungover when this craving strikes) but also because I don’t much like drinking smoothies; I prefer to eat food than to drink food. This is entirely my personal preference and I understand if you don't understand. But surely everyone has 'ways' they like to eat particular foods, right? Here are some of mine: peeling off the mango skin and eating it straight from the stone (best done with many napkins – or in the bath), cutting toast up into pieces so I can eat it mindlessly with one hand at my desk, layering cooked fruit, non-dairy yogurt and nuts, all topped with crushed up digestive biscuits to make a strange single-portion faux-trifle. This is all top-secret information that I am hesitant to share, but hey, I like to eat! I like this smoothie bowl because it's so simple and delicious. The bananas somehow taste sweeter after an overnight freeze, and blend remarkably well to an ice cream texture which is cut through by the sharp blueberries. The mint leaves are optional but I like how they add a refreshing coolness. I found using a food processor easiest, but a blender or smoothie maker will work; you may need to scrape down the sides a few times."
