I personally am not a shamrock shake fan since I don't really like mint but I definitely see the appeal of this as a healthier, lower calorie alternative! Perhaps, you could even use a different milk like almond or coconut to adjust the flavor or consistency. I think I would leave out the mint (sorry!) but would still enjoy this as a smoothie base!
