Magical Crescent Roll Breakfast Casserole
Magical Crescent Roll Breakfast Casserole is the best hearty breakfast recipe for those busy mornings. It's also a great casserole to make when you've got company over and need something that will quickly and efficiently satisfy a crowd. This easy breakfast casserole is made with eggs, ground beef sausage, some optional vegetables, cheese and crescent rolls. All you need is 30 minutes to cook and you're golden. This casserole is easily customizable which makes it perfect for holiday gatherings and potlucks.

Ingredients
- 1 pound ground breakfast sausage
- 1 tablespoon butter
- 1 onion, chopped
- 1 package frozen broccoli
- 10 eggs
- 1/2 cup half and half or milk
- 1/4 cup shredded Parmesan cheese
- 1 cup shredded Cheddar cheese
- 1 package crescent rolls (8 count)
- Salt and pepper, to taste

Instructions

Preheat oven to 350 degrees F.

Cook breakfast sausage, drain off any grease. Set aside.

Place butter in pan and sauté onions for 5 to 10 minutes until clear. Add in broccoli and cook for an additional 5 to 10 minutes until broccoli is warmed, stirring occasionally. Set aside.

In a large bowl, crack the eggs. Add cream, salt, pepper, half and half, and parmesan cheese. Whisk until the eggs are scrambled.

Spray the bottom of a 2-quart casserole dish with cooking spray. Line bottom of casserole dish with all of the crescent rolls. (You may have to move them around to completely cover the dish).

Evenly spread the cooked breakfast sausage over the crescent rolls along with the broccoli and onion mixture.
- Pour egg mixture over the top of everything and top with shredded Cheddar cheese.

Cover and bake for 30 to 35 minutes. Uncover and cook for additional 5 minutes until the cheese is golden brown.

I absolutely love this Magical Crescent Roll Breakfast Casserole. Broccoli and all, especially broccoli combined with Parmesan and Cheddar cheese. The crescent roll crust is a real bonus, and I love the use of breakfast sausage. The great thing about this casserole is it's versatility. You can make it with whatever combination of ingredients you prefer. So go ahead and make it as written, or change it up to you liking, you can't lose with this recipe.

Hmmm, ground beef sausage...is there such a thing? I love breakfast casseroles during the week when I barely have time to cook and the more veggies the better in my book so I'm looking forward to trying it with broccoli but, I think instead of using crescent rolls it might be more hearty and flavorful if hash browns were used as the crust instead.

I like broccoli but I don't usually think of it as a breakfast food. I'd be more inclined to use some chopped green pepper in place of the broccoli. Spinach would also be a good replacement. Some tomato would be nice, or I think I might serve this with some salsa and use some Mexican shredded cheese in place of the plain cheddar.

I love broccoli, but I'm not thrilled about broccoli in this recipe. I think I would like spinach instead. We love breakfast casseroles and crescent rolls make the recipes even easier.
