Summer Veggie Omelette
"We love breakfast foods. This Veggie Omelet is so great for any time of year because you can use your favorite seasonal vegetables. Because we're such big breakfast fans this recipes often makes an appearance on the dinner table. They're quick to make and everyone can customize to their liking. Omelets are also very friendly for dieting. They're packed with protein and full of low carb, low fat ingredients making them wonderful meal staples for those of us on a healthy lifestyle path."

Ingredients
- 1 teaspoon Extra Virgin Olive Oil
- Bell Pepper
- Fresh Spinach
- Onion
- Broccoli
- Mushrooms
- 1 ounce Shredded Cheese

Chop veggies into bite size pieces.

Heat olive oil in small frying pan.

Add chopped veggies and saute until soft. (approx 3 to 4 minutes).

Whip egg in small bowl and pour over veggie mix.

Cook until medium set (aprox. 3 minutes) and flip over.

Continue to cook until desired firmness.
