Mama Mia I love this Zucchini Ricotta Quiche recipe. It is so quick and easy to make, and so full of rich Italian flavors. Ricotta, garlic, mozzarella, how can you go wrong? I can't wait to try this with yellow squash. I may even go rogue and try it with eggplant. The only thing I did different was I did not use the walnuts, just a personal preference.
