Old Fashioned Cowboy Beans
Go back to the basics with these tasty, Old Fashioned Cowboy Beans. Among pinto bean recipes this is one of the most delicious, featuring a nice kick of chili spices.
Ingredients
- 1 pound dried pinto beans
- 1/4 pound salt pork
- 1 teaspoon salt
- 1 onion, diced
- 14 1/2 ounces can whole tomatoes, chopped
- 3 tablespoons chili powder
Instructions
- Pick beans clean and wash. Place in a large pot (at least 4 quarts). Cover with water and soak overnight.
- When ready to cook, drain beans and add fresh water to cover 1 inch above beans.
- Add salt pork and salt. Boil for 30 minutes.
- Add onions, tomatoes and chili powder and continue boiling for 2 to 3 hours or until the beans are tender.
- Add additional water as needed.

These beans sound really delicious, but I honestly have no idea what salt pork is or where on Earth I might find it. Is this a regional thing, or would my butcher know what it is? Maybe I might try substituting cured ham. I'm wondering if you could substitute canned pinto beans or if it would mess up the recipe entirely. I was thinking that dices bell peppers would be a nice addition to the beans near the end for a bit of a crunch. My Dad always added a tiny drizzle of molasses to his beans for a sweet twist in with the heat. These sure do sound good!
