Amazing Alabama Lane Cake
Amazing Alabama Lane Cake is one of those easy cake recipes that will "wow" every time. This is one of the most unique cake recipes you'll ever make. When you read the ingredients list, you wouldn't necessarily think all the elements would work well together. But they do! Combining white cake mix, maraschino cherries, German chocolate cake frosting or coconut pecan frosting, raisins, more pecans and white cake frosting, make this layered cake one that will keep you intrigued flavor-wise. We were so curious about this southern-style cake recipe that we had to test it out in our kitchen, and we couldn't have been more impressed by the results. Ingredients
- 4 egg whites
- 1 package white cake mix
- 1 cup water
- 1/4 cup vegetable oil
- 1 (10-ounce) jar maraschino cherries
- 1 (15-ounce) container German Chocolate Cake Frosting or Coconut Pecan Cake Frosting
- 3/4 cup pecans
- 1/2 cup raisins
- 1 (16-ounce) container White Cake Frosting
Instructions

Preheat oven to 350 degrees F. Spray two 9-inch cake pans with cooking spray.

With electric mixer on high speed, whip egg whites until they hold stiff peaks.

Remove to another bowl and, in the mixer bowl, combine cake mix, water and oil on medium speed for 2 minutes. Raise speed to medium high and beat 2 minutes, until smooth. Fold the two mixtures together and divide evenly between the two cake pans.

Bake cake layers for about 25 minutes until cake tests done in the center. Remove to a cooking rack 5 minutes, then invert on cooling racks and remove pans; let stand until completely cool.

While cake cools, drain the maraschino cherries on paper towels. Reserve 3 or 4 of the most perfect ones, then remove stems from the rest and chop those into inch pieces.

Chop the pecans and reserve 2 tablespoons for garnish. Chop the raisins. Combine German Chocolate frosting with the cherries, pecans and raisins.

Split both cakes horizontally into two layers using a long serrated knife. Place one of the four layers onto a serving platter and spread one third of the coconut mixture evenly on top. Repeat with two more layers of cake and coconut mixture, then top with the final cake layer, top side up.

Frost the entire cake with the white frosting. Garnish with reserved chopped nuts and whole cherries.

I love the combination cake, frosting, and cherry. The nuts are okay, but rather than two layers of them, I'd be happy with just one.

This cake is exactly what you need if you're bored of dull, single-flavor cakes. I swear, with every bite I was tasting something different. And I love the crunch the nuts give; it's really all-around a safe and delicious dessert idea.
