Fresh Blueberry Cake
Ingredients
- 1/2 cup butter
- 1 cup sugar
- 3 eggs, beaten
- 2 cups flour
- dash salt
- 1 pint blueberries
- 1 teaspoon vanilla
- 2 teaspoons baking powder
Instructions
Sift flour, measure and resift flour with baking powder and salt. Cream shortening and sugar; add beaten eggs. Beat well. Add sifted dry ingredients, then vanilla and mix well. Batter will be very thick. Blend in the berries thoroughly. Spoon into an 8 or 9 inch square greased and floured baking pan. Bake in preheated 350 degree oven for 60 minutes. Note: If using frozen berries, don't thaw them.
