    Lemon apricot Cake

    Ingredients

    • 1 box Lemon Supreme Cake mix
    • 1-1/4 cup apricot nectar
    • 4 eggs, beaten
    • 1/2 cup sugar
    • 1/2 cup oil

    Instructions

    Mix first 4 ingredients, then add eggs. Bake at 3250 for 45 minutes to 1 hour. While cake is still warm, mix the icing and pour over cake. Some versions of this recipe call for poking holes in the cake with a toothpick before pouring on the icing. I prefer not to poke the holes so that the icing doesn't seep through the cake and make it sticky. Icing: 1 cup confectioners sugar Juice of 1 lemon
