Lemon Lime Angel Food Cake

Ingredients

  • 1 c cake flour
  • 1 2/3 c superfine sugar
  • 12 lg egg whites
  • 1 ts cream of tartar
  • 1/2 ts salt
  • 2 ts fresh lemon juice
  • 2 ts fresh lime juice
  • 1 1/4 ts grated lemon peel
  • 1 1/4 ts grated lime peel

Instructions

Yield: 24 Servings. Position Rack in lowest third of oven at 350 degrees Sift flour with 1/3 cup sugar. Beat egg, lemon & lime juice. Gradually beat in remaining 1 cup sugar. Continue beating until stiff. Mix lemon and lime peel. Sift 1/4 cup of flour into whites. Continue until flour is gone. Spoon into 10" tube pan. Bake for 42 minutes. Invert pan and place it on a bottle and allow to cool. Pour Lemon-Lime Glaze over Cake. Lemon Lime Cake Glaze 1 tb fresh lemon juice 1 tb fresh lime juice 1/2 ts grated lemon peel 1/2 ts grated lime peel 1 1/4 c sifted powdered sugar Heat Lemon and Lime juices in a saucepan over low heat. Pour into a bowl. Add peels - mix enough sugar to form a pourable glaze. Dribble over cooled Lemon-Lime Angel Food Cake.
