Maraschino Cherry Cake (makes 3 8 or 9 Inch Layers)
Ingredients
- 3 3/8 cups sifted flour
- 2 cups granulated sugar
- 4 1/2 teaspoons baking powder
- 1 1/2 teaspoon salt
- 3/4 cup soft shortening
- 3/8 cup maraschino cherry juice
- 24 maraschino cherries, cut up
- 3/4 cup chopped nuts
- 3/4 cup milk
- 6 egg whites (3/4 cup), unbeaten
Instructions
Sift together flour, sugar, baking powder, and salt. Add soft shortening, cherry juice, cherries, nuts and milk. Beat 2 minutes with electric mixer. Add egg whites and beat 2 minutes more. Pour into pans that have been greased and floured. Bake layers at 350 degrees for 30 to 35 minutes. Let cool in pans for 10 minutes then remove from pans and finish cooling on cake racks. Frost layers with desired frosting and decorate with maraschino cherries and nuts.
