I've made this many times, sans coconut, and found it to be a winner. I did notice it has more crunch the first day but then gets a little soggy. Any suggestions?

I didn't melt my butter, what I did was use 1 - 2 sticks of butter (enough to cover the batter) cut them up to small squares...try that, also I 1 can of pie filing and 1 can of crushed pineapples (juice and all).

shirinkhambata - the topping is supposed to be "crunchy", I doubt you did anything wrong. This recipe is hard to mess up. I make this all the time and I always cut the butter up and don't melt it and I've NEVER covered it with foil and I just use nuts so maybe the coconut burns too easy. Hope you try it again because it really is deeeeeelish!! :)

You don't need to cover it with foil if you use no coconut. Instead use one and one-half sticks of butter, NOT melted but sliced up, to cover the dry cake mix. If you want crunch, use about a cup (more or less) of nut halves, pecan is best. Baking it for an hour makes it golden brown and DELISH! Jimmie Ellis
