I wasn't sure if I would like this dessert recipe at first, since amount of the sugar and the cheese seemed like a strange combination. It is actually quite good, and isn't as sweet as thought it would be. The sour cream and the parmesan cheese work to balance out the sweet with their tartness. I think it would be good for breakfast with some fresh fruit.

This looks delicious and reminds me of the Johnny cakes my dad used to eat (they were made of savory cornmeal and then he would add sugar and warm milk. It was a fun late evening sweet treat). I've never cooked with rice flour before but this looks like an easy recipe to start with, and it's sweet so I'm sure it would be good. The recipe name is a bit deceiving as I'm not sure where "quesadilla" comes into play? Maybe a little research will enlighten me. Thanks for sharing!
