St. Louis Butter Cake
Meet me in St. Louis for a wonderful easy cake recipe that will leave you saying, "it's sooo good." Moist and rich, the loaf will be gone before you even know it. Sprinkle powdered sugar on top for an extra sweet little treat. St Louis Butter Cake is too good to pass up.
Ingredients
- 1 cup all-purpose flour
- 3 tablespoons sugar
- 1/3 cup butter or margarine
- 1 1/4 cup sugar
- 3/4 cup butter or margarine
- 1/4 cup light corn syrup
- 1 egg
- 1 cup all-purpose flour
- 2/3 cup evaporated milk
- 1 teaspoon vanilla, optional
Instructions
Preheat oven to 350 degrees F.
Sifted powdered sugar (optional) In a mixing bowl, combine 1 cup flour and 3 tablespoons sugar.
Cut in 1/3 cup butter till mixture resembles fine crumbs and starts to cling.
Pat into the bottom of a 9x9x2-inch baking pan.
For filling, in the mixing bowl, beat the 1 1/4 cups sugar and 3/4 cup butter or margarine till combined. Beat in the corn syrup and egg till just combined.
Add the 1 cup flour and evaporated milk alternately to the mixing bowl, beating till just combined (batter will appear slightly curdled). Pour into crust-lined baking pan.
Bake for about 35 minutes or till the cake is nearly firm when you shake it.
Let cool in pan on wire rack. Remove to serving plate. Sprinkle with powdered sugar, if you like. Serves 9.
