Wintergreen Cake with Icing

Ingredients

  • 3 cups sifted cake flour
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 3 teaspoons baking powder
  • 60 count (1/2 lb) wintergreen lozenges
  • 1/2 cup vegetable shortening
  • 1/4 teaspoon vanilla
  • 2 eggs
  • 1 1/2 cup milk

Instructions

Soak lozenges in milk overnight in refrigerator. Sift all dry ingredients together; add shortening and a little over half of the milk mixture. Beat for 2 minutes at medium speed with mixer. Then add remaining milk mixture, eggs and vanilla. Beat for 2 minutes. Pour into two 9 inch round waxed paper-lined baking pans and bake for 30 to 35 minutes at 350 degrees. Icing 2 egg whites 3/4 cup vegetable shortening 3/4 lb. powdered sugar Beat with mixer until well blended. Add 1/2 the 10x sugar and blend well. Then add remaining 10x sugar and blend well.
