- 1 packet saltine crackers1
- 1 stick butter
- 1/2 cup light brown sugar, packed
- 1 1/2 cup dark chocolate chips
- 1 cup pecan halves

Preheat oven to 400 degrees F.

Line baking sheet with foil. Align saltine crackers on the sheet in a single later.

In a large microwave safe bowl, melt butter and brown sugar together. Cook on high for 2 1/2 minutes, until the sugar and butter are boiling together.

Carefully remove the bowl from the microwave and pour over all the crackers.

Spread with a spatula and place the baking sheet in the oven for 5 minutes until the toping is golden brown and bubbly.

Remove from the oven and immediately sprinkle with chocolate chips. Return to the oven for 1 minute to soften the chocolate and then spread the chocolate evenly over everything.

Sprinkle with pecans.

Allow the candy to cool completely before breaking it into pieces and serving.

This Country Bumpkin Crack Candy recipe is the absolute best. It is so easy to whip up you can just make some any time you have that "salty/sweet" craving. I love the idea of adding these to a Christmas cookie exchange. Maybe I'll put some red and white sprinkles on top. How cute will that be!

Before actually reading the recipe, I don't know why but I seriously thought there would be pumpkin in it.... what a pleasant surprise. This is so easy to make and kinda reminds me of pralines, only much more lighter and I assume flakier because of the crackers. You can probably put individual crackers into a cupcake pan to make them more uniform in size if you wanted and maybe layer them too. Yum!

Yes! I am in love with this candy! My Mum makes it every year at Christmas time and it is one of the first things to be devoured on the dessert table. Honestly, there are never any leftovers! I know it might sound like a weird recipe because of the saltine base, but it really is fantastic. I've put these in Christmas care packages and had rave reviews. It's also fun to include the recipe on a little card to the recipient so they can make it themselves as well. Now I'm drooling...I'l have to make some of this later this week!
