Pumpkin Pie Fudge
This is one of those fall-inspired recipes that gets you excited for pumpkin season. Pumpkin Pie Fudge is an easy homemade fudge recipe that includes flavors of white chocolate, pumpkin pie spice, vanilla, and more. Marshmallow fluff is stirred into the fudge before it sets up, so the end product is soft, melt-in-your-mouth fudge with amazing pumpkin flavor. Simply cook the fudge on the stove and leave it in the refrigerator to set up.

Ingredients
- 3/4 cup unsalted butter
- 3 cups sugar
- 2/3 cup evaporated milk
- 1 cup canned pumpkin
- 2 tablespoons light corn syrup
- 2 1/2 teaspoons pumpkin pie spice
- 9 ounces white chocolate chips
- 7 ounces marshmallow fluff
- 1 teaspoon vanilla extract
Instructions

Melt butter over medium heat in a medium saucepan.

Stir in the sugar, milk, pumpkin, corn syrup, and pumpkin pie spice and increase heat to medium-high.

Cook, stirring constantly, until mixture comes to a boil. Continue cooking, stirring constantly, until a candy thermometer reads 234 degrees F (soft-ball stage).

Remove pan from heat. Stir in white chocolate, marshmallow fluff, and vanilla until well blended.

Line a 9x9 baking dish with aluminum foil and lightly coat with cooking spray. Spread fudge into the dish and let stand 2 hours or until completely cool. Cut fudge into squares.

Well, this is certainly different than the normal recipes you generally see around this time of year...there's pretty much every other type of fudge out there (my favorite being peanut butter) so why not pumpkin. I'm not sure it would be my cup of tea but I'm sure it would be a great gift when you're handing out your yearly goody baskets to friends and family. AuntKarolyn...I'm not much of a pumpkin pie fan, but the pumpkin pie crust cookies sound like they would be a great idea for Fall!

This Pumpkin Pie Fudge is absolutely delightful. It is the perfect flavor for the Fall season, and will go perfectly with the Pumpkin Pie Crust Cookies (the recipe can be found on this site) I am making for Halloween. This fudge is truly melt in your mouth goodness. I had to resist the temptation to squirt a little whipped cream on top, it tastes that much like pumpkin pie.

I thought I had enough pumpkin recipes to last me for the year, but it seems there's always room for another one to try out. This looks delicious and I definitely want to give this a go. This is a perfect thing to make up for Halloween and Thanksgiving, and I think a pan of this would be a definite hit. Fudge is always a hit anytime of year.
