Amish Chicken Surprise Bake
The Amish are known for their simple and easy casserole recipes. This wonderful recipe for Amish Chicken Surprise Bake is a great dish for dinner that is loaded with rice, mushrooms broccoli and then topped with cheddar cheese to make it extra tasty. Ingredients
- 2 chicken breasts, butterflied
- 2 cups cooked rice
- 1/2 cup chopped mushrooms
- 1 1/2 cup milk
- 12 ounces Cheddar cheese, shredded
- salt and pepper to taste
- 1 medium yellow onion
- 1 frozen package chopped broccoli, thawed
Instructions

Preheat oven to 350 degrees F.

Cut chicken into chunks and season with seasoning salt.

Saute over medium to high heat. When chicken is golden brown on both sides, take off heat and put to the side.

Mix the onion, broccoli, msuhrooms and milk together in a bowl. Stir in chicken and 3/4 of the cheddar cheese.

Spread out into a greased baking dish and pour the rest of the cheese on top.
- Bake for 30-40 minutes.

My husband will not eat broccoli so I used a well drained can of cut green beans instead. I always substitute green beans for broccoli in recipes or make half with broccoli for me and the other half of the dish with green beans for him, like when I make chicken divan.

Catlady, That was rude. It was not obvious. Most chicken, rice and veggie recipes incorporate the rice into the dish, not serve it over the rice.

Catlady, maybe the human being who was asking, "where does the rice come in" was a first time cook! Or an elderly person needing a little help!! Be kind to other's. One day you are going to need to ask a question!!
