Beefy Bell Pepper Casserole
This Beefy Bell Pepper Casserole is a godsend if you don't have much time to cook. Easy-to-make casseroles like this one allow you to put everything in one dish for a low-fuss meal. Your beef, peppers, and rice are all there in one convenient casserole!

Ingredients
- 1 pound ground beef
- 1 can (14.5-ounces) diced tomatoes
- 1/2 cup uncooked rice
- 2 teaspoons Worchestershire sauce
- 1/4 teaspoon black pepper
- 1/2 cup onion, chopped
- 1 large bell pepper, diced
- 1/2 cup water
- 1/2 teaspoon salt
- 1 cup shredded Cheddar cheese
Instructions
- Pre-heat oven to 350 degrees F.
- Brown beef; drain. Transfer to a 2-quart casserole. Add the next 8 ingredients.
- Cover and bake for 1 hour or until rice is done. Rice may be partially cooked before adding if you wish.
- Uncover and sprinkle with cheese on top. Return to oven and bake until cheese is melted.

This is less labor intensive than stuffed bell peppers and it has some similar flavors. To make this a healthier version, I would use lean ground beef, reduced sodium Worcestershire sauce, and reduced fat cheddar cheese. This casserole probably tastes a lot like the stuffing of a traditional stuffed bell pepper with a few minor differences.

Just to be clear, when it says to add the next 8 ingredients, are the to be layered or mixed together?
