This Beefy Sour Cream Noodle Bake is such an interesting combination of flavors. I honestly would never think of sour cream, cottage cheese, and sharp cheddar cheese together, but they come together beautifully in this recipe. This recipe is a winner, and a welcome addition to my dinner repertoire. You need to give it a try, your family will love it.

I love casseroles. They are so easy to whip up after a long day, relax while they are cooking, and have dinner on the table just in time for everyone to be hungry. This recipe is great for that. It is delicious also! It is so creamy and filling. The only thing I did was slightly under cook the egg noodles. That way they can finish cooking in the oven, and be perfect when they come out. This is definitely a keeper recipe!

This is a quick and easy recipe that will get dinner on the table in no time at all! For my version, I would use lean ground beef, no salt added tomato sauce, lite sour cream, low-fat cottage cheese, and reduced-fat cheddar cheese. Since I like leftovers, I would double the recipe. The egg noodles need to be drained while they are a bit underdone because they will continue to cook in the oven. Then, the pasta will be a good consistency when the meal is served.
