Ingredients

  • 1 (8-ounce) ham steak, diced
  • 1 (20-ounce) bag shredded hash brown potatoes (3 1/2 cups)
  • 1/2 small onion, chopped
  • 4 ounces sharp Cheddar cheese, shredded (1 cup)
  • 1 (12-ounce) can evaporated milk
  • 1 egg
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 350 degrees F.

  2. Layer half of the potatoes in an 8 x 8 inch baking dish or 2-quart casserole dish coated with cooking spray. Top with half of the onion, half of the ham, and half of the cheese. Repeat layers.

  3. In a large bowl, whisk together the milk, egg, salt, and pepper - pour over casserole.

  4. Cover dish with foil, and bake for 1 hour. Remove foil and bake for 5 more minutes, or until top is browned and bubbly. Let stand 10 minutes before serving.

I was a little surprised to see that this casserole calls for only one egg. I normally make this style of hash-brown casserole with a number of eggs. I'll have to give this a try, since I like this style of breakfast dish. I think I might add a bit of chopped green pepper to this. I'm also wondering how a substitution of bacon for the ham might turn out. It's definitely a dish to try and experiment with.
