Dump-and-Bake Stuffed Bell Peppers Casserole
"Skip the tedious prep work and throw all of the raw ingredients into one dish! This Dump-and-Bake Stuffed Bell Peppers Casserole is a deconstructed version of the classic dinnertime favorite -- in about 10 minutes! I've used the flavors and ingredients from classic stuffed bell peppers and transformed them into a dump-and-bake casserole. It's like the best of both worlds: a healthy, delicious meal that comes together in minutes! I don't have to spend time browning the meat, cooking the rice, or sautéing the vegetables first."
NotesCooking Just for Two? Cut the ingredients in half and bake the casserole in a small 1-quart baking dish. The cooking time should remain the same, or may need to be shortened by about 5 minutes.

A delicious and very comforting meal which is suitable for the entire family. The day we had ours some vegetarian friends were visiting so I replaced the meat with lentils and used home made vegetable stock. Accompanied by a fresh green salad straight from the garden it was a lovely meal and one which we will definitely be repeating.
