This sounds like an easy casserole featuring the delicious flavor of fully loaded nachos. For this recipe, I would use lean ground beef, and drain it before adding other ingredients. Instead of using taco seasoning mix, I would add comino, chili powder, and garlic powder to the ground beef. I would also use lite cream cheese, lite sour cream, and reduced fat Mexican blend cheese. Besides diced tomatoes, guacamole and sliced jalapenos would be good toppings for this casserole.
