    Fancy Fruit and Beef Casserole

    Fancy Fruit and Beef Casserole is a flavorful dish that will really "wow" your dinner guests. This subtly sweet casserole uses apricots and orange rind to complement the flavor of the steak. This is a rare gem among easy casserole dishes.

    Ingredients

    • 1 1/2 pound stewing steak
    • grated rind and juice of 1/2 orange
    • 2 tablespoons green beans
    • 1 ounce butter or drippings
    • 1 tablespoon lemon juice
    • 1 onion, sliced
    • 1 teaspoon salt
    • 4 ounces fresh or dried apricots
    • 1/4 teaspoon pepper
    • 1/2 pint water

    Instructions

    1. Pre-heat oven to 350-370 degrees F.
       
    2. Cut steak into 2-inch strips. Heat butter in a frying pan and fry until meat is brown.
       
    3. Transfer meat and onion to a 2-pint casserole. Add beans, apricots, orange and lemon juice, seasoning, and water. Mix together thoroughly.
       
    4. Cover and cook 1 1/2 hours or until meat is tender.
