Garden Vegetable Casserole
Easy casserole dishes are a great way to add some "oomph" to your boring old sides. This Garden Vegetable Casserole combines a variety of fresh veggies in a succulent wine-infused broth for a mouth-watering side dish that will really impress your guests!

Ingredients
- 1 cup vegetable broth
- 1 teaspoon garlic cloves, minced
- pepper, to taste
- 1 teaspoon Italian seasoning
- 2 onions, sliced
- 1 green pepper, sliced
- 1 turnip, sliced
- 4 celery ribs, sliced
- 6 medium carrots, sliced
- 1/3 cup dry white wine or sparkling apple juice
Instructions
- Pre-heat oven to 350 degrees F.
- In non-stick medium saucepan over high heat, combine broth, garlic, pepper, and Italian seasoning. Simmer for 1 minute.
- Pour broth mixture into large non-stick baking dish. Add remaining ingredients and mix well.
- Cover casserole and bake for 45 minutes or until vegetables are tender. Serve hot.
