Ingredients
- 10 ounces package of frozen chopped broccoli
- 3/4 cup onion, chopped
- 2 tablespoons butter
- 4 eggs, beaten
- 2 cups milk
- 1 1/2 cup sharp Cheddar cheese, grated
- 1 cup cooked rice
- 1/4 cup chopped canned green chilie
- 1 jar (about 2 ounces) pimentos, chopped
- 1 1/4 teaspoon salt
- 1/2 teaspoon Worcestershire sauce
Instructions
- Preheat oven to 350 degrees F.
- Rinse broccoli with hot water to separate; drain well. Saute onion and broccoli in butter until onion is tender. Combine with eggs and milk. Stir in cheese, rice, chilies, pimentos, salt, and Worcestershire sauce.
- Turn into a greased 8-inch square baking dish. Set in shallow pan of hot water. Bake about 40 minutes, or until set in center.

This is a good casserole for those who like broccoli and for people looking to eat more meatless main dishes, and adopt healthier eating habits. Not only is this recipe easy to make, but it sounds delicious, too. For this casserole, I would use skim milk, reduced fat cheddar cheese, mild green chilies, and low sodium Worcestershire sauce. Sliced mushrooms would be a good addition to this dish.
