Ingredients
- 1 pound ground beef
- 1/2 cup onions, chopped
- 16 ounces stewed tomatoes
- 1 clove garlic
- 1 large green pepper
- 1/2 cup uncooked long grain rice
- 1/2 cup water
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded cheddar cheese
Instructions

Preheat oven to 350 degrees F.

In a skillet, brown beef and onions. Drain off fat. Transfer to a greased two quart casserole dish.

Add tomatoes, garlic, green pepper, rice, water, Worchestershire sauce, salt and pepper and mix.

Cover and bake for 1 hour or until rice is tender.
- Uncover and sprinkle with cheddar cheese. Return to oven and bake for an additional 5 minutes.

This is a twist on the traditional stuffed bell peppers recipe. What is different about this casserole, is that it doesn't require tomato soup and the use of more than one bell pepper. Also, this is easier to make than stuffed bell peppers. For this recipe, I would use lean ground beef, low sodium Worcestershire sauce, and reduced fat cheddar cheese.
