Ingredients
- 2 pounds chicken breasts
- 9 ounces Provolone cheese
- 1 cup sour cream
- 8 ounces canned diced green chilies
- 2 ounces red bell pepper
- 3 ounces red bell pepper
- 3 ounces whole corn kernels
- 2 ounces cherry tomatoes
- 1 teaspoon Salt
- 1 teaspoon ground black pepper
- 2 tablespoons butter
- 2 tablespoons vegetable oil
Instructions

Preheat oven to 400 degrees Fahrenheit.

Prepare a 9x13 casserole dish and brush some butter.

Cut chicken breasts into bite-size pieces, season with salt and pepper.

Heat oil in a large skillet and add the chicken. Cook for 3 minutes until cooked through.

Arrange sautéed chicken in a casserole dish.

In a separate bowl, mix cheese, sour cream, and canned diced green chilies (with juice).
