Ingredients
- 8 potatoes (peeled, cooked and mashed)
- 1 1/2 pound lean ground beef, very lightly browned in frying pan
- 1 can tomatoes
- 2 large onions, chopped
- salt and pepper to taste
- 2 tablespoons butter
Instructions
- Preheat oven to 375 degrees F.
- Place cooked mashed potatoes in bottom of large prepared casserole dish.
- Put butter over potatoes and add salt and pepper to taste.
- Put half of the chopped onions and half of the ground beef over the potatoes.
- Repeat with last of onions and then ground beef.
- Add can of tomatoes to top of casserole, making sure it's covered well with tomatoes. Use a large spoon to spread them around if necessary.
- Sprinkle with salt and pepper and cook uncovered in oven for 2 hours.

This is an easy casserole that everyone will like. With the kid friendly ingredients of ground beef and potatoes, this is sure to be popular, especially with picky eaters. For added flavor, shredded cheddar cheese could be included in this recipe. When making this, I would drain the ground beef after browning it.
