Ingredients

  • 8 ounces bacon, chopped
  • 1 pound fettuccine
  • salt and fresh ground pepper to taste
  • 1 teaspoon garlic powder
  • 1 cup chopped onions
  • 1 red bell pepper, chopped
  • 1 can petite diced tomatoes, drained (14.5 ounces)
  • 2 cans condensed cheese soup (10.75 ounces)

Instructions

  1. Bring a large pot of water to a boil, add 1 Tablespoon salt and cook spaghetti until al   dente, about 7 minutes or as package directs. Drain.  

  2. Meanwhile, in a large skillet, sauté the bacon over medium heat until it is just beginning to crisp.

  3. Add onion, salt, pepper, garlic powder, and bell pepper into the skillet, return to medium high and cook, stirring frequently, until vegetables are tender, about 5 minutes. 

  4. Stir in tomatoes and soup, stirring until well combined.

  5. Add fettuccine, mix, and serve.

Can you seriously beat the combination of flavors in this Our Favorite Comfort Casserole recipe? It is so easy to make, with the simplest of ingredients, and delivers great flavor for a satisfying weeknight dinner. I agree with Edmund K and added grated Parmesan on top, for me it gave it an Italian flare. Serve with some crispy Italian bread on the side and enjoy.

How many will this recipe serve?

This is a tasty meal and it doesn't take long to make. I did change from adding cheese soup to making my own cheese sauce and it was still amazing. You could make the sauce in the time it takes to cook the pasta. This time of year, I have an abundance of bell peppers. It is always nice to find recipes to use them them up.

Bacon, cheese, fettuccine. What more could I need in a dish of comfort food? I've always regarded macaroni and cheese as just about the perfect comfort food, and this is rapidly challenging mac cheese for top spot. I love the fact that it's a simple one-pot dish that's easy to cook and very filling. I sprinkle some Parmesan cheese on top just because I believe there's no such thing as having too much cheese.

Fettuccine is a favorite in our home and, looking at this recipe, I just knew it was going to be a hit and I was right! The only change I made was to use freshly grated cheese (because tinned cheese soup is not a thing here in South Africa). I also added another tin of chopped tomatoes and a splash of olive oil to make up for the liquid in the cheese soup. Do give this recipe a try it is so simple to make and very tasty.
